La Badessa

Classic method from Black Pinot and Chardonnay grapes. Badessa is a sparkling wine characterized by acid strength and fatness, elegance and longevity; a bubble that plays rigorously on freshness and invites you to drink dry and well defined. You don’t expect this bubbles from a land of red wines, but historically suitable to the sparkling tradition.

Vinification

The harvest start normally in the first week of September, when the grapes have reached the perfect balance between sugar and acidity level. The first part of alcoholic fermentation is done in steel tank and the second part is done in barrique of French oak
