“Sonvico”

From this marriage between the oldest vineyards of Barbera and Cabernet Sauvignon was born an austere wine, structured, complex and intriguing, which many rewards and satisfactions led to Cascina La Barbatella. Cabernet strong tannin and fresh structure of the Barbera together with a long aging in the cellar a wine, give a wine that knows fully enjoy his admirers a er the necessary years of aging but able to become eternal and it has always something special for us.

Vinification

Manual harvesting of the best bunches and full maturation towards the third decade of September; vinification with destemming crush and maceration with skin contact in steel tanks with temperature controlled of 26-28°C for 15-20 days; frequently pumping over and punching down
